I was trying to avoid adding too much powdered sugar because I didn't want it to be super, super sweet, so I ended up with more of a glaze than a frosting, but a little goes a long way (I used less than half of the frosting). If you put too much on, you lose the flavor of the pumpkin. This is a great unique cookie for your holiday platter!
I finally got to try out the convection feature of my new oven today. Convection heating uses a fan to blow the air around inside the oven... it's supposed to cook more evenly. I don't see myself needing to use this feature very often... but with two sheets of cookies, I wanted to give it a try. Normally, I would have to swap racks in the middle of baking because the top sheet always cooks faster than the bottom. I was hoping that with the convection I wouldn't have to do that, but it still seemed that the bottom rack needed an extra minute or so. Oh well, more experimentation needed! I might try separating the racks more next time, and putting the sheets offset so they are not one right on top of the other.
